    You’ve planned your Easter Menu out already and you are set to go.  But the one thing we usually forget is, what’s for breakfast?  Barb Kiebel from Creative-Culinary has some choice recipes that will thrill your family and Easter guests

    For the Traditionalist:

    Creamed Eggs on Toast Points

    My children are both grown up and beyond the years of me hiding baskets or hunting for eggs (OK, I still put up this adorable little Easter tree with ornaments and yes, they are not so old they don’t expect a chocolate treat from Mom!). However, some traditions remain and this dish is a standard that we have had for as many years as I can recall. It’s not hard to wonder why; a dozen or more hard boiled eggs left by the Easter Bunny needed to be used and my girls weren’t thrilled with having a plain hard boiled egg every day for a week. Sure, I could make egg salad but that was pretty standard fare so one day thought to make a dish that would allow us to hunt for and eat those eggs on Easter morning.     For the Health Oriented

    Homemade Granola with Mixed Nuts and Coconut

    I may need an intervention. I started making my own granola a couple of years ago and it’s out of control. If I don’t have some for breakfast, well, it’s not pretty. I can’t concentrate, coffee barely helps and I’m so desperate that I’ve wondered if Cheerios and Craisins on yogurt would satisfy in a pinch. Click for the recipe here.

    For a Treat

    Maple Bacon Biscuit

    Before I became part of a local blogger group I used to hold regular brunches at my home with a group of girlfriends; we called ourselves ‘The Marthas.’ Marriages and moves saw us eventually disband but these were a HUGE hit at our last get together. Now that I’ve been reminded of how much I love them, I think a batch for my blogging buddies has to be put on the agenda. What can I say but absolutely fabulous! Click for the recipe here.

    The BEST Mimosas

    Mimosas are often associated with brunches and what better day to serve a brunch cocktail than Easter. Or Mother’s Day. Or maybe any day. A combination of orange juice and champagne, they offer a light accompaniment to your late morning meal. I’ve long loved adding just one more touch; just a bit of liqueur.     This drink was featured in the July ’09 issue of Bon Appetit magazine. I had just received the magazine and was having friends over for a cocktail and luckily had the fruit on hand and some of my favorite sparkling wine chilling in the fridge. One of the mainstays of my summer bar is Cristalano Spanish Cava. Cava is produced in Spain and Prosecco in Italy and they are just as good as…but can’t be called Champagne. That is legally only allowed by the sparkling wine producers in the area of Champagne, France.  Click for the recipe here.

    Barbara Kiebel started her online life seventeen years ago when she began professionally developing websites.  The first website she made for herself was back in 1995 and was a place to feature her best recipes for her family and friends.  In the last few years, she segued it to a food blog, Creative-Culinary.com.  She prepares new recipes, photographs them and talks a bit about the store to table experience.  Her specialty cocktails are making news on her ‘Happy Hour Friday’  column where she occasionally pairs them with appetizers.

  • The PERFECT Authentic Mexican Breakfast- Amelia Ceja’s Chilaquiles!

    Last week I had the extreme pleasure of attending Kelley Moore’s Workshop ‘And We’re Live’ , a branding and video workshop (more on that later) in Napa, California.  We were hosted at Ceja Vineyards where Amelia Ceja and her daughter, Dalia kept the wine flowing and treated us royally to the most wonderful authentic Mexican cuisine.

    Our first day, Amelia made us the classic Mexican breakfast or brunch dish, Chilaquiles.  Made with homemade salsa, tortilla chips, eggs and topped with cheese and Creme Fraiche, Chilequilas it is a very popular dish in Mexico putting salsa and tortilla leftovers to good use.  It is also believed to help cure a hangover due to the chemical release of the chiles  which contain capsaicin, a pain reliever.  It is one dish you will want to put in you cookbook file no matter what the reason! Deliciosa!

     

    Chilaquiles

    Serves 8
    Cook Time: 50 minutes

    chilequiles 1• 2 dozen corn tortillas each tortilla cut into 8 wedges
    • 10 beaten eggs
    • corn oil
    • salt to taste
    • 3 lbs tomatoes coarsely chopped
    • 3 jalapeño peppers coarsely chopped
    • 3 minced garlic cloves

    • 3 tbsp olive oil
    • 1 medium white or yellow onion coarsely chopped
    • Cotija cheese or queso fresco
    • Crema Mexicana or créme fraiche
    • cilantro chopped
    • avocado sliced

     

    For Spicy Tomato Salsa

    1- Place coarsely chopped tomatoes and jalapeño peppers into a saucepan then add 2 cups of water and bring to a boil. Simmer for 20 minutes.

    2 -Remove cooked tomatoes, jalapeño peppers and the cooking liquid from saucepan into a blender. Add minced garlic cloves and pulse until blended but not puréed.

    3 -Then add 2 tbsp of olive oil to a medium hot sauté pan. Add in the coarsely chopped onion and cook for 5 minutes.

    4 – Add the contents from the blender and bring to a boil.

    5 – Reduce heat and simmer for 10 minutes. Season with salt and pepper to taste.

     

    For Chilaquiles

    1 – In a large sauté pan, coat pan generously with corn oil (1/4 inch), heat to medium high to high. When the oil is hot, add 1/2 of the tortillas, and fry until golden brown. Remove tortillas to a paper towel lined plate to soak up excess oil. Repeat the procedure with the rest of the tortillas. Wipe pan clean of any browned bits of tortillas.

    2 – Add 3 tbsp olive oil to pan and bring to medium heat. Add the fried tortillas then pour the beaten eggs over them. Stir with a spatula to coat the tortillas with the beaten eggs and cook until eggs are set (about 5 minutes).

    3 – Now add in spicy tomato salsa and stir until most of the salsa is absorbed by the tortilla-egg mixture (about 5 minutes). Add salt and pepper to taste. Cook for a few more minutes.

    4 – Serve immediately and garnish with crumbled Cotija cheese or queso fresco, Crema Mexicana or crème fraiche, chopped cilantro and an avocado slice.

     

    The wines served from the Ceja Vineyards at brunch were exceptional.  Thirty-one years ago, Amelia and Pedro Ceja and Pedro’s brother Armando and his wife, Martha built their vineyards up from scratch starting with 15 acres.  Today,  Ceja Vineyards has 115 acres on which they grow several varietals that produce a vast array of beautiful wines.  Every sip is exquisite and delicious and pairs perfectly with Amelia’s Mexican dishes.  For more of Amelia’s authentic Mexican recipes, follow her here at Ceja Vineyards or watch her videos on Salud Napa!

    Just a suggestion… you might want to look into their wine club. It is by far one of the best wine club deals and you will fall madly, head over heels in love with their wines.  This is one tip you will not want to ignore.
